Principles of Human Nutrition is a major textbook written primarily for undergraduate and postgraduate students. This important text covers in depth the principal aspects of human nutrition, with particular emphasis on the chemical nature of nutrients and their metabolism. Within the pages of this comprehensive work, nutrition is looked at in the context of the history of food, the food chain, and epidemiology with respect to deficient, normal and excessive diets.
